I know that there are a ton of things that you can do with video. I have been working on stuff on my own and actually you might be interested in two things that are also out there on the web. One is Current TV and the other is Darwin Streaming Server which is an open source streaming server for video. I have even set it up on my home server which you can check out to see how little band with and an old Pentium 3 machine handles video. If you are interested in this at all let me know.
