Gridley McKim-Smith teaches courses in Spanish Baroque art and art of the Habsburg empire, art and technology, the history of realism, and art of the Spanish-speaking world. Her recent research has concentrated on the implications of scientific examinations of 17th-century Spanish paintings, particularly works by Velazquez; art vandalism and gender; the history of the body through the study of costume; and polychrome sculpture of Latin America.

McKim-Smith's book Examining Velazquez, the product of an innovative study she undertook with a paintings conservator and a conservation scientist, was the first winner of the College Art Association/Heritage Preservation Award for Distinction in Scholarship and Conservation. Her research has been supported by grants from the National Endowment for the Arts, the American Philosophical Society, the American Council of Learned Societies, the National Gallery's Center for Advanced Study in the Visual Arts, and Comite Conjunto (Treaty of Cooperation between the U.S. and Spain).
